Metropolitan
A medium brown roast. The norm for most of the American West.
Viennese
Medium-dark brown roast. Certain sugars develop (bittersweet) giving the beans an understated caramel-like quality.
Continental
Moderately darker brown roast. Acidity imparts the richness and full bodied characteristics of dark roasted coffees, rich and resonant.
French
Dark brown roast. Dark roast taste dominates and gives the pungent richness of dark roast coffee.
Italian
The surface is definitely oily. The body is thinner and the bittersweet taste of dark roast flavor becomes more prominent.
Bohemian
A definite charred taste is dominant. This roast requires a very special taste. Definitely not an espresso roast.
